Peanut Butter Pie, Syd's Recipe

Ingredients
  • 1 c peanut butter, extra crunchy .
  • 3 c water .
  • 6 egg yolks, beaten .
  • 4 tbsps unsalted butter .
  • 28 oz sweetened condensed milk .
  • 2 tsps vanilla extract .
  • 5 1/2 tbsps cornstarch

Directions
  • Step #1 In a large mixing bowl, dissolve the cornstarch in the water.
  • Step #2 Stir in the condensed milk & the egg yolks.
  • Step #3 Add peanut butter & beat until well mixed.
  • Step #4 Pour the mixture into a large heavy saucepan.
  • Step #5 Bring the mixture to a boil, cooking & stirring until it is thickened & bubbly.
  • Step #6 Remove from heat.
  • Step #7 Stir in the butter & vanilla extract.
  • Step #8 Cool the filling slightly before pouring it into either a baked pie shell or a graham cracker or cookie crumb pie shell.
  • Step #9 Cover up & chill at least 4 hrs.
  • Step #10 Refrigerate leftovers.
