Mediterranean Pita Recipe

Ingredients
  • 1/2 c sliced cucumbers .
  • 1 plum tomato, sliced .
  • 2 tsps extra-virgin olive oil .
  • 1/2 c fresh baby spinach .
  • 1 tsp red wine vinegar .
  • 1/8 tsp black pepper .
  • 1/4 c crumbled feta (optional) .
  • 1 veggie burger, warmed .
  • 1 whole wheat pita bread

Directions
  • Step #1 Cook the vegetable burger patty as desired.
  • Step #2 Then mix the tomato, vinegar, oil, spinach, cucumber, Feta, & pepper.
  • Step #3 Toss.
  • Step #4 Spoon the salad mixture into the pita.
  • Step #5 Crumble the vegetable burger on top.
  • Step #6 Note you can use a vegan sub cheese for the feta if desired.
