Cream Corn Corn Muffins Recipe

Ingredients
  • 1/2 tsp sugar .
  • 1 c whole wheat pastry flour .
  • 1 c stone ground yellow cornmeal .
  • 1 (8 1/2 oz) can cream-style sweet corn, plus enough water to measure 1 3/4 c .
  • 2 eggs, lightly beaten .
  • 1 tbsp canola oil .
  • 2 tbsps better than milk plain soy powder .
  • 1/4 tsp salt .
  • 1 tbsp baking powder

Directions
  • Step #1 Preheat oven to 375°F.
  • Step #2 Stir dry ingredients into mixing bowl, set aside.
  • Step #3 Combine sweet corn, water, eggs.
  • Step #4 Stir wet ingredients into cornmeal mixture.
  • Step #5 Put a few drops of canola oil into each muffin c & heat in the oven for 3 mins.
  • Step #6 Spoon an equal amount of the muffin mixture into each c.
  • Step #7 Bake for 25 mins or until the edges & top of muffins are just starting to turn brown.
  • Step #8 Allow muffins to cool for a few mins before removing from pan.
