Chocolate Zabaglione Recipe

Ingredients
  • 1 lb fresh strawberries, hulled & quartered .
  • 1/2 c dry marsala .
  • 1/2 c semi-sweet chocolate chips .
  • 8 large egg yolks .
  • 1 pinch salt .
  • 1/4 c whipping cream or heavy cream .
  • 2/3 c sugar

Directions
  • Step #1 Add cream & chocolate to a heavy small saucepan.
  • Step #2 Cook over low heat/flame, stirring often, until the chocolate chips are melted & smooth.
  • Step #3 Set aside & keep warm.
  • Step #4 Whisk the egg yolks, Marsala, sugar, & salt In a large-ish glass bowl until mixed.
  • Step #5 Set the bowl over a saucepan of simmering water, but do not allow the bottom of the bowl to touch the water.
  • Step #6 Whisk the egg mixture over the simmering water until it is thick & creamy, about 4 mins.
  • Step #7 (This step could take up to 12 mins) Remove from the heat.
  • Step #8 Using a large rubber spatula, fold the melted chocolate mixture into the egg mixture.
  • Step #9 Divide the strawberries among 6 coupe dishes.
  • Step #10 Pour the warm zabaglione over the strawberries & serve.
