Tortellini With Creamy Butternut Squash Recipe

Ingredients
  • 3 c fresh butternut squash, cut into 1/2-inch pieces .
  • 2 (9 oz) packages put in the fridged cheese tortellini .
  • 1 red pepper, coarsely sliced .
  • 1 tbsp fresh sage .
  • 5 1/4 oz garlic & herb spreadable cheese .
  • 1 c milk

Directions
  • Step #1 Heat milk, squash, red pepper & sage in a medium saucepan over med-heat/flame until simmering.
  • Step #2 Cover up & cook for 8 mins until squash is tender.
  • Step #3 Meanwhile boil tortellini as pkg directions, reserving 1 c cooking water before draining.
  • Step #4 Remove saucepan from heat; stir in the garlic & cheese spread.
  • Step #5 Toss with drained tortellini & reserved cooking water as needed.
