5 c all-purpose flour (alternately, white whole wheat might work, haven't tried it yet) .
1 1/2 c sugar .
2 1/4 tsps active dry yeast .
1/2 c unsalted butter, melted .
1 tbsp cinnamon .
2 tbsps butter .
1 pinch nutmeg, freshly grated
Directions
Step #1 Place 1/3 c of the warm milk in the bowl of an electric mixer.
Step #2 Stir in the yeast & set aside for five mins or so.
Step #3 Be sure your milk isn't too hot or it will kill the yeast.
Step #4 Stir the butter & sugar into the remaining c of warm milk & add it to the yeast mixture.
Step #5 With a fork, stir in the the eggs, nutmeg & salt, flour, just until the flour is incorporated.
Step #6 With the dough hook attachment of your mixer beat the dough for a few mins at medium speed.
Step #7 This is where you are going to need to make adjustments - if your dough is overly sticky, add flour a few tbsps at a time.
Step #8 Too dry? Add more milk a bit at a time.
Step #9 You want the dough to pull away from the sides of the mixing bowl & eventually become supple & smooth.
Step #10 Turn it out onto a floured counter-top, knead a few times (the dough should be barely sticky), & shape into a ball.
Step #11 Transfer the dough to a buttered (or oiled) bowl, cover, put in a warm place (I turn on the oven at this point & set the bowl on top), & let rise for an hr or until the dough has roughly doubled in size.
Step #12 Punch down the dough & roll it out 1/2-inch thick on your floured countertop.
Step #13 Most people (like myself) don't have a doughnut cutter, instead I use a 2-3 inch cookie cutter to stamp out circles.
Step #14 Transfer the circles to a parchment-lined baking sheet & stamp out the smaller inner circles using a smaller cutter.
Step #15 If you cut the inner holes out any earlier, they become distorted when you attempt to move them.
Step #16 Cover up with a clean cloth & let rise for another 45 mins.
Step #17 Bake in a 375° oven until the bottoms are just golden, 8-10 mins - start checking after 8.
Step #18 Meanwhile, place the butter in a medium bowl.
Step #19 Place the sugar & cinnamon in a separate bowl.
Step #20 Remove the doughnuts from the oven & let cool for just a min or two.
Step #21 Dip each one in the melted butter & a quick toss in the sugar bowl.
