Pasta With Mushroom, Bacon And Walnut Sauce Recipe

Ingredients
  • 50 g walnuts, toasted, sliced .
  • 1/2 c flat leaf parsley, sliced .
  • 500 g pasta (fresh or dried) .
  • 2 tsps rosemary, sliced .
  • 40 g butter .
  • 200 g bacon, rashers cut into thin strips .
  • 2 garlic cloves, crushed .
  • 200 g mushrooms, sliced .
  • 200 ml creme fraiche .
  • 100 g cheddar cheese, grated, plus extra to serve

Directions
  • Step #1 Cook the pasta In a large-ish saucepan of boiling salted water according to packet instructions, then drain.
  • Step #2 Meanwhile, melt the butter in a deep fry pan over med-heat/flame.
  • Step #3 Add the bacon & cook for 2 mins.
  • Step #4 Add the garlic, stirring every once in awhile, rosemary & mushrooms & cook, for a further 5-6 mins.
  • Step #5 Add the creme fraiche & grated cheese & stir for 2 mins, then add three quarters of the toasted walnuts.
  • Step #6 Add the drained pasta & parsley to the sauce, tossing together until heated through.
  • Step #7 Divide among sering bowls, then sprinkle with remaining nuts & extra cheese.
