Chocolate Pillows Recipe

Ingredients
  • 12 wonton wrappers .
  • 1/2 c port wine or red Zinfandel wine .
  • 1/4 c dried tart cherries .
  • 3 oz bar bittersweet chocolate, cut into 6 pieces .
  • grated bittersweet chocolate .
  • 2 c canola oil (other cooking oils ok) .
  • sugar .
  • vanilla ice cream .
  • 1 tbsp sugar (2 tbsp if using zinfandel) .
  • 1 tbsp butter .
  • 1 egg, beaten

Directions
  • Step #1 SAUCE:.
  • Step #2 Heat port to boiling in saucepan; reduce heat.
  • Step #3 Boil carefully, uncovered, 3 to 4 mins or until reduced to 1/3 c.
  • Step #4 Add sugar; cook & stir 1 min.
  • Step #5 Add cherries, cook 2 mins more, stirring every once in awhile.
  • Step #6 Remove from heat.
  • Step #7 Whisk in butter; keep warm.
  • Step #8 Meanwhile, heat oil in 2-quart saucepan over med-heat/flame until temperature reaches 350 degrees F.
  • Step #9 While oil heats, brush edges of 1 wonton wrapper with beaten egg.
  • Step #10 Place 1 piece of chocolate in center.
  • Step #11 Top with another wrapper to form pillow.
  • Step #12 Press edges to seal.
  • Step #13 Repeat with wrappers, beaten egg, & chocolate.
  • Step #14 Cook filled pillows, 1 at a time, in hot oil for 1 min or until golden, turning frequently.
  • Step #15 Remove with slotted spoon.
  • Step #16 Drain on paper towels.
  • Step #17 Adjust heat as needed to maintain oil temperature.
  • Step #18 Cool slightly; sprinkle with sugar.
  • Step #19 Serve pillows with cherry sauce & ice cream.
  • Step #20 Sprinkle top ice cream with grated remaining pillows up to 24 hrs.
