Step #1 In a large cast iron skilled over medium high heat brown beef.
Step #2 Reduce heat to medium & add the tomatoes, onion, garlic & ginger.
Step #3 Stir well.
Step #4 Stir in the coconut milk.
Step #5 Sprinkle top with oregano, red pepper flakes, salt & pepper.
Step #6 When mixture comes to a boil reduce heat to medium low.
Step #7 Cover up & let simmer, until beef is tender, stirring every once in awhile, around 1 & 1/2 hrs.
Step #8 Stir in beans, cooking for an extra 15 mins.
Step #9 Taste & adjust seasonings.
Step #10 Stir in cilantro.
Step #11 Serve.
