- 1 tbsp red pepper flakes .
- 2 tsps fresh ginger, grated .
- 3 garlic cloves, minced .
- 1 large yellow onion, sliced .
- 1/3 c fresh cilantro, sliced .
- 4 tbsps olive oil .
- 6 large tomatoes, cut into wedges .
- 1 (19 oz) can black beans, drained & rinsed .
- 1 tsp pepper .
- 1 (13 1/2 oz) can unsweetened coconut milk .
- 1 tsp salt .
- 3 lbs beef chuck, cut into 1 inch cubes
Directions
- Step #1 In a large cast iron skilled over medium high heat brown beef.
- Step #2 Reduce heat to medium & add the tomatoes, onion, garlic & ginger.
- Step #3 Stir well.
- Step #4 Stir in the coconut milk.
- Step #5 Sprinkle top with oregano, red pepper flakes, salt & pepper.
- Step #6 When mixture comes to a boil reduce heat to medium low.
- Step #7 Cover up & let simmer, until beef is tender, stirring every once in awhile, around 1 & 1/2 hrs.
- Step #8 Stir in beans, cooking for an extra 15 mins.
- Step #9 Taste & adjust seasonings.
- Step #10 Stir in cilantro.
- Step #11 Serve.
