Red Onion Soup Recipe

Ingredients
  • 3 tbsps extra-virgin olive oil .
  • 1 1/2 lbs red onions, peeled & sliced .
  • 3 (14 oz) cans beef broth .
  • 2 tbsps all-purpose flour

Directions
  • Step #1 Heat 3 tbsps oil in heavy large pot over med-high heat.
  • Step #2 Add onions & sauté until brown, about 25 mins.
  • Step #3 Sprinkle top flour over sautéed onions; stir 2 mins.
  • Step #4 Gradually mix in broth, scraping up browned bits from pan bottom.
  • Step #5 Simmer 15 mins.
  • Step #6 Working in batches & using on/off turns.
  • Step #7 mix soup in processor to coarse puree.
  • Step #8 Return soup to pot & bring just to simmer.
  • Step #9 Spice up with salt & pepper.
  • Step #10 Ladle soup into bowls.
