White Chocolate Iced Cranberry Bread Recipe

Ingredients
  • 1/2 c powdered sugar .
  • 1-2 tbsp half-and-half .
  • 1/2 tsp baking soda .
  • 3/4 c half-and-half .
  • 3/4 c sugar .
  • Icing .
  • 2 eggs .
  • 1 1/2 tsps baking powder .
  • 1/4 c orange juice .
  • 2 1/4 c flour .
  • 1/2 c coarsely sliced dried sweetened cranberries .
  • 1 oz white chocolate baking bar, sliced .
  • 2 tsps grated orange peel .
  • 1/2 c butter or margarine, melted .
  • 1/2 tsp salt

Directions
  • Step #1 Heat oven to 350 degrees.
  • Step #2 Grease bottom only of 8x4 inch loaf pan.
  • Step #3 In large bowl, baking powder, mix flour, sugar, baking soda & salt; mix well.
  • Step #4 Stir in cranberries.
  • Step #5 In small bowl, mix 3/4 c half & half, orange peel & eggs; beat well.
  • Step #6 Add half & half mixture, melted butter & orange juice to flour mixture; stir just until dry ingredients are moistened.
  • Step #7 Pour batter into greased pan.
  • Step #8 Bake at 350 degrees for 50 to 60 mins or until deep golden brown & toothpick inserted in center comes out clean.
  • Step #9 Cool in pan for 10 mins.
  • Step #10 Run knife around edges of pan to loosen.
  • Step #11 Remove loaf from pan; place on wire rack.
  • Step #12 Cool 1 hr or until completely cooled.
  • Step #13 In small microwave safe bowl, mix baking bar & 1 tbsp of the half & half.
  • Step #14 Microwave on high for 30 seconds; stir until melted & smooth.
  • Step #15 If necessary, microwave an extra 10 to 20 seconds.
  • Step #16 With wire whisk, beat in powdered sugar until smooth.
  • Step #17 If necessary, add extra half & half, 1/2 tsp at a time, until of desired consistency.
  • Step #18 Spoon & spread icing over cooled loaf, allowing some to run down sides.
