Flounder Fillets With Panko Bread Crumbs Recipe

Ingredients
  • 2 tbsps olive oil, can use canola oil .
  • 1/4 c panko .
  • fresh ground black pepper .
  • kosher salt .
  • 4 flounder fillets .
  • 1 lemon, scored, thinly sliced, for garnish .
  • 1/4 c fresh lemon juice .
  • 1 tsp fresh thyme leaves .
  • 2 tbsps unsalted butter .
  • 1/2 tsp paprika

Directions
  • Step #1 Rinse fillets & pat dry with paper towels.
  • Step #2 Place panko in a small shallow bowl & sesson with salt, paprika, & thyme leave & then stir this to mix.
  • Step #3 Dredge fish on both sides in the seasoned panko.
  • Step #4 Melt 2 tbsps each butter & oil In a large-ish heavy skillet, over medium high heat & when hot put in 2 or 3 fillets at a time, one layer deep.
  • Step #5 Cook each side until lightly golden, about 2-3 mins.
  • Step #6 Carefully turn with a wide spatula & cook about 2 mins longer.
  • Step #7 Spice up with freshly ground pepper keep warm.
  • Step #8 Continue cooking remaining fillets.
  • Step #9 Discard any fat in skillet; add lemon juice, scraping pan with a wooden spatula to deglaze pan juices.
  • Step #10 Pour warm sauce over fillets & serve as soon as possible.
  • Step #11 Garnish with lemon slices if desired.
