6 oz ground dried chile or roasted chilies, finely sliced .
2 (12 oz) cans beer (or 8 kegs beer, ice cold, can't blame a guy for trying!) .
2 tbsps fine cornmeal (optional) or masa harina (optional) .
2 jalapeno peppers, seeded & finely sliced .
3 tbsps corn oil .
28 oz crushed tomatoes .
2 stalks celery, sliced .
1 tsp sage .
4 c pinto beans (optional) or black turtle beans, fully cooked (optional) .
1 tbsp ground coriander .
5 tbsps chili powder .
1 bell pepper, sliced .
2 tsps oregano .
2 lbs skirt steaks, cut into 1/2-inch cubes .
2 c beef stock .
1 bay leaf .
2 tbsps ground cumin .
10 garlic cloves, minced .
2 medium onions, roughly sliced .
1 tbsp paprika .

Directions
Step #1 In a large cast iron skillet, heat the oil on medium high heat until quite hot & lightly brown the meat.
Step #2 Brown in three or four batches, to avoid overcrowding the skillet.
Step #3 Transfer the browned meat to a large Dutch oven or heavy casserole.
Step #4 Discard all but 3 tbsps of fat from the skillet.
Step #5 Reduce the heat under the skillet to medium & add the garlic, onion & sliced jalapeno pepper.
Step #6 Saute for 2 mins, stirring often.
Step #7 Add the cumin, coriander, paprika, chile powder, chile flakes, oregano & sage to the skillet; stirring well to coat the onions, garlic & jalapenos with the spices.
Step #8 Continue cooking the spice mixture for another min, stirring frequently to avoid scorching.
Step #9 Add the bell pepper, celery, crushed tomatoes with their juice & the canned chiles.
Step #10 Stir well with a wooden spoon, scraping the bottom & sides to loosen any tasty bits stuck to the skillet.
Step #11 Transfer contents of the skillet to the Dutch oven & place over medium high heat.
Step #12 Add the beef stock, bay leaf & beer to the dutch oven, stirring well to mix all the ingredients.
Step #13 Bring the chili to a boil.
Step #14 Reduce the heat to low & with the pot half covered, cook at a simmer from 1 to 2 hrs, until the meat is tender.
Step #15 If you are adding beans: When the meat is tender, add the cooked beans & let simmer another 20 mins.
Step #16 Hot beans may also be held on the side & added by request.
Step #17 Note: If you want the chili to be a little thicker, add 2 tbsps of the corn meal or masa harina a little at a time, stirring constantly.
Step #18 This will tighten the chili up some & add a subtle, earthy flavor.
Step #19 Politically incorrect, somewhat humorous safety tip: No matter how great you've been told you look in one, never wear a toga when working around an open flame.
Step #20 (Or an open toga when around a flaming worker).
