Chicken A La King Baked Potato Topping Recipe

Ingredients
  • 1/2 c whipping cream .
  • 1 (3 lb) roasting chickens .
  • 1/4 tsp pepper .
  • 1 c sliced mushrooms .
  • 1 c green peppers, sliced .
  • 1/4 c flour .
  • 1 tbsp almonds, sliced .
  • 2 c milk .
  • 1 tbsp pimiento, sliced .
  • 1 1/2 tsps salt .
  • 4 tbsps butter

Directions
  • Step #1 Place the chicken In a large-ish pot with 1 tsps of the salt & water to cover.
  • Step #2 Cook over med-heat/flame until the chicken is tender, about 1 hr.
  • Step #3 Remove the skin & bones & cut the meat into 1-inch pieces.
  • Step #4 Reserve 1 c of the broth.
  • Step #5 Make a white sauce by melting the butter in a heavy medium saucepan over low heat/flame.
  • Step #6 Stir in the milk, stirring constantly with a wooden spoon; cook this until thick, about 4 mins.
  • Step #7 Add the chicken, mushrooms, pimiento, green pepper, & almonds.
  • Step #8 Add the cream, the remaining salt, & pepper.
  • Step #9 Cook for about 5 mins.
  • Step #10 Add 1/2 c of the chicken broth if the mixture is too thick.
  • Step #11 Keep hot in a crockpot or chafing dish over very low heat.
  • Step #12 Serve over baked potatoes.
