Ingredients
  • 2 unbaked regular 9-inch pie shells (2 c volume) .
  • 3/4 c brown sugar .
  • 2 large eggs .
  • 2 1/4 tsps pumpkin pie spice .
  • 1 (12 fluid oz) can evaporated milk .
  • 1 (15 oz) can pumpkin

Directions
  • Step #1 Preheat oven to 425.
  • Step #2 Beat eggs in large bowl.
  • Step #3 Stir in pumpkin, brown sugar, & spice.
  • Step #4 Gradually stir in the evaporated milk.
  • Step #5 Pour into pie shells.
  • Step #6 Bake in oven for 15 mins.
  • Step #7 Reduce temperature to 350; bake 30-40 mins or until knife inserted near center comes out clean.
  • Step #8 Note: Do not freeze, as this will cause the crust to separate from the filling.
