Double Fudge Brownie Chunks Recipe

Ingredients
  • 1 1/2 tsps salt .
  • 1/3 c low-fat milk .
  • 2 (1 oz) unsweetened chocolate squares, coarsely sliced .
  • 1 1/2 c unsalted butter .
  • 1 tbsp unsalted butter .
  • 2 1/4 c sifted all-purpose flour .
  • 4 c coarsely sliced walnuts .
  • 2 1/2 c sifted confectioners' sugar .
  • Frosting .
  • 6 large eggs .
  • 7 (1 oz) unsweetened chocolate squares .
  • 1 1/2 tsps vanilla extract .
  • 1 1/2 tbsps vanilla extract .
  • 3 c granulated sugar

Directions
  • Step #1 To make the brownies, preheat your trusty oven to 325°F & butter a 15-1/2 x 10-1/2 x 2-inch baking pan.
  • Step #2 In a small saucepan, melt the butter & chocolate over low heat/flame; cool.
  • Step #3 Onto a piece of waxed paper, sift the flour & salt, then toss with the nuts.
  • Step #4 In a large bowl, with a mixer at high speed, beat the eggs just until foamy.
  • Step #5 Add the sugar, then the cooled chocolate mixture & vanilla, & beat just until mixed.
  • Step #6 Stir in the flour mixture just until it disappears, then spoon into the prepared pan.
  • Step #7 Bake for 35 mins, or just until set & a toothpick inserted in the center comes out almost clean.
  • Step #8 Let cool completely in the pan before frosting.
  • Step #9 To make the frosting, butter, heat the chocolate, & 1/3 c of milk in a small saucepan over low heat/flame until chocolate melts, stirring frequently.
  • Step #10 Cool to lukewarm, then pour this into a medium bowl.
  • Step #11 Stir in sugar & vanilla.
  • Step #12 Using a mixer, beat at high speed for about 10 mins, or until thick enough to spread.
  • Step #13 If frosting is too thick to your liking, you can add between 1-3 tbsps more milk & beat again to desired consistancy.
  • Step #14 Frost completely cooled brownies in pan.
  • Step #15 Refrigerate until ready to serve, then cut into 1-inch chunks & remove this from pan.
