Pineapple Porkettes Recipe

Ingredients
  • 8 slices canned pineapple .
  • 16 slices bacon .
  • 3 c cooked mashed potatoes .
  • 1 lb ground pork .
  • salt & pepper .
  • 1 beaten egg

Directions
  • Step #1 With a sharp knife, split each slice of pineapple into 2 thin slices.
  • Step #2 Mix the pork with beaten egg & form into 8 round patties the size of pineapple slices.
  • Step #3 Spice up the potatoes & shape into similar patties on a thin slice of pineapple.
  • Step #4 Place a pork patty, a potato patty on top of the pork, & top this with thin slice of pineapple.
  • Step #5 Wrap 2 slices of bacon around each patty in a criss-cross fashion fastening in place with toothpicks.
  • Step #6 Place in a baking pan & bake this at 350 degrees for 1 ¼ hrs.
  • Step #7 Yield: 6-8 servings.
