Scallops In Brie Cream Recipe

Ingredients
  • 14 large scallops .
  • 3 oz brie cheese .
  • 1/3 c chablis .
  • 2/3 c whipping cream .
  • white pepper .
  • salt

Directions
  • Step #1 In a medium pan over med-heat/flame lightly poach the scallops in wine for 4 mins-you do not want them fully cooked.
  • Step #2 Remove with a slotted spoon & set aside.
  • Step #3 Add Brie to wine & let simmer-you want the cheese melted.
  • Step #4 Reduce sauce by half.
  • Step #5 Add cream to the wine/cheese sauce & let simmer until the sauce begins to thicken.
  • Step #6 Return scallops to pan.
  • Step #7 Cook for 2-3 mins more, but no longer or you will have rubber scallops.
  • Step #8 When Sauce is thick & creamy pour over pasta or spinach leaves, divide scallops between the two plates.
  • Step #9 Serve.
