Creamy Pinto Soup Recipe

Ingredients
  • 2 c sodium-free vegetable broth or bean stock .
  • 1 medium jalapeno pepper, sliced (size depending on how hot you like it) .
  • 3-4 garlic cloves, minced .
  • 3 c cooked pinto beans .
  • 3/4 tsp oregano .
  • 1/4-1/2 tsp salt (optional) .
  • 2/3 c sliced onions .
  • 1 1/2 c fresh tomatoes, sliced or use canned tomatoes .
  • 1 1/2 tsps cumin

Directions
  • Step #1 Soften the onions, garlic & pepper in water for 5-10 mins.
  • Step #2 Prepare other ingredients.
  • Step #3 Add remaining ingredients except salt & bring to a boil.
  • Step #4 Reduce heat to a simmer & cook, mostly covered, 10-15 mins.
  • Step #5 In 2 batches, puree the soup in a food processor/blender until creamy(haven't tried the mixer, though that would probably work too).
  • Step #6 Add salt to taste, if desired.
  • Step #7 Return to pot & keep over low heat/flame until ready to serve.
