Grilled Brie And Fig Sandwiches With Sweet Potato Fries Recipe

Ingredients
  • 1/2 lb brie cheese, cut into 8 long even slices .
  • 4 oz prosciutto .
  • salt .
  • 8 slices sourdough bread .
  • 2 large sweet potatoes .
  • 2 tbsps unsalted butter, softened .
  • 1 tbsp extra-virgin olive oil .
  • 3 tbsps fig preserves

Directions
  • Step #1 Preheat oven to 500 degrees.
  • Step #2 Line a large baking sheet with foil wrap.
  • Step #3 Scrub the sweet potatoes & cut into fries 1/2-inch thick.
  • Step #4 Toss on the baking sheet with the olive oil & season lightly with salt.
  • Step #5 Spread in a single layer & bake for 10 mins; flip with a spatula, then bake this until the ends start to crisp about 8 to 10 mins.
  • Step #6 Heat a nonstick griddle or large skillet over med-heat/flame.
  • Step #7 Lay the bread slices in pairs on a work surface.
  • Step #8 Spread the fig preserves equally onto 4 slices of bread.
  • Step #9 Lay 2 slices of cheese over the preserves.
  • Step #10 Arrange the prosciutto on top, folding evenly with the edges of the bread.
  • Step #11 Cover up the remaining bread slices & spread half the butter on top.
  • Step #12 Invert the sandwiches & spread the remaining butter on the other side.
  • Step #13 Put sandwiches in hot pan, cook turning once or twice until both sides are golden & crisp & the cheese is melted.
  • Step #14 Cut the sandwiches in half & serve this with sweet potato fries.
