Ingredients
1/2 c rice, raw (washed & soaked in water for at least 20 mins) .
4 oz rice cakes, thinly sliced .
2 c dried adzuki beans
Directions
Step #1 In a heavy pot, cook the red beans with 12 c of water for 30 mins over a medium flame.
Step #2 Stir frequently.
Step #3 Then cook for 40 more mins over a low flame.
Step #4 Let the soup cool.
Step #5 The beans should look smothered & the consistency dense.
Step #6 Remove the outer shells of the red beans.
Step #7 Use a mesh strainer & pour the bean soup through it.
Step #8 If the consistency is too thick, add some water to help separate the peel further & press the beans through the strainer.
Step #9 Pour the strained soup back into the pot.
Step #10 Add the rice & 2 c of water & cook for 15 mins over a medium flame.
Step #11 Stir constantly.
Step #12 Over a low flame, cook for 15 mins more, stirring.
Step #13 Add the rice cake & cook for 5 mins, stirring.
Step #14 If the soup feels too thick, add a little water until it is the desired consistency.
