Gramma's German Pancakes With Honey Butter Recipe

Ingredients
  • 1 tbsp vanilla .
  • 1 tbsp sugar .
  • 3 eggs .
  • 1 c honey, warmed (not watery) .
  • 1/2 c flour .
  • 1/2 c butter, divided .
  • 1/2 c butter, melted .
  • 8 tbsps cream (or milk) .
  • 1/2 c milk

Directions
  • Step #1 Preheat oven to 375, put oven rack in middle position.
  • Step #2 While oven is heating up, divide butter in half (1/4°C each).
  • Step #3 Melt one of the halves.
  • Step #4 The other half, divide again, & place pieces in two large cast-iron or stone-ware frying pans.
  • Step #5 Place pans in oven while it preheats.
  • Step #6 In a mixer, mix melted butter, eggs, sugar, flour & milk.
  • Step #7 Remove pans from oven, swirl butter around slightly up the side of the pans.
  • Step #8 Pour half of the flour-milk mixture into the first pan, the remainder in the second pan.
  • Step #9 Quickly return pans to the oven.
  • Step #10 Bake until fluffy, golden brown & crispy, about 45 mins.
  • Step #11 The puffiness goes down as it cools.
  • Step #12 Serve as soon as possible with Honey Butter (follows).
  • Step #13 PREPARE HONEY BUTTER: While the pancakes are baking, rinse out mixer; pour in warmed honey & start mixer on medium-high.
  • Step #14 Slowly drizzle in half of the 1/2°C melted butter; mix for 10 seconds, then add in the remaining butter.
  • Step #15 Mix for 3 mins (if you can stand the racket!).
  • Step #16 Add cream & vanilla; mix/pulse just enough to mix it inches This makes 1 1/2 c & is best served warm.
  • Step #17 Store leftover honey butter in fridge.
