Connie's Stroganoff Recipe

Ingredients
  • flour (for dredging) .
  • 1/2 c red wine (for deglazing) .
  • 20 oz sirloin steaks .
  • salt & pepper .
  • 2 medium onions, sliced .
  • 1 pint sour cream .
  • butter (for frying) .
  • 16 oz beef stock .
  • 8 oz sliced mushrooms .
  • 1 tbsp Worcestershire sauce .
  • parsley (to garnish)

Directions
  • Step #1 Slice the steak into very thin strips.
  • Step #2 To make it easier to thinly slice, freeze the steak for 30 mins.
  • Step #3 Dredge in flour & set aside.
  • Step #4 In a hot sauté pan melt butter & sauté the mushrooms first then add the onions.
  • Step #5 The mushrooms take a little longer.
  • Step #6 In a separate pan, brown strips of sirloin that have been dredged in flour.
  • Step #7 Set both aside.
  • Step #8 When the onions & mushrooms are done, deglaze both of the pans with the wine & then mix all ingredients into one pan.
  • Step #9 Add 2 c beef stock, remaining wine & ½ pint of sour cream.
  • Step #10 Simmer for 30 to 45 mins.
  • Step #11 (During the cooking, the sour cream may separate & some of the butterfat will become visible.
  • Step #12 This is normal, just stir the pot.
  • Step #13 ).
  • Step #14 Just before serving, add the balance of the sour cream, stir this to mix.
  • Step #15 Serve over noodles or rice pilaf & garnish with parsley.
