Corn And Black Bean Wraps Recipe

Ingredients
  • 2 oz shredded monterey jack cheese .
  • 1/4 c sliced fresh cilantro .
  • 1 (11 oz) can mexicorn, drained .
  • 4 (8-9 inch) jalapeno-cilantro tortillas .
  • 1/4 c bottled salsa .
  • 1 (15 oz) can black beans, drained & rinsed

Directions
  • Step #1 Heat oven to 350 degrees F.
  • Step #2 In a medium bowl, corn, mix black beans, cheese, cilantro & salsa; mix well.
  • Step #3 Spoon 1/4 of bean mixture down center of each tortilla.
  • Step #4 Fold in ends & then roll up each tortilla; wrap each in aluminum foil wrap.
  • Step #5 Bake at 350 degrees F for 10 mins or until heated through & cheese is melted.
  • Step #6 Serve with guacamole & extra salsa.
