Mexi-cali Penne Recipe

Ingredients
  • 8 oz penne pasta .
  • 8 oz canned black beans (drained & rinsed) .
  • 16 oz canned Mexican style stewed tomatoes .
  • 3 tbsps ground flax seeds .
  • 8 oz canned whole kernel corn (drained)

Directions
  • Step #1 Boil pasta in salted water according to package direction.
  • Step #2 While pasta boils, dump in the tomatoes, In a large-ish bowl, cutting up any pieces that are larger then bite size.
  • Step #3 Add corn, black beans, & flax & stir.
  • Step #4 When pasta is done, & as soon as possible add to bowl with tomatoes, drain, corn & beans.
  • Step #5 Toss together.
  • Step #6 Serve with sprinkle of cheese if desired.
