Step #1 Soften the onion, in about a 1/4 c water, in a medium-large pot, till the water is just about gone.
Step #2 Meanwhile, heat oil over medium in a small pan.
Step #3 Add garlic & saute for just a min or so, not quite till golden.
Step #4 Add remaining spices & stir this to coat.
Step #5 Saute these for another couple of mins, reducing heat if necessary.
Step #6 (You can use more oil if you wish.
Step #7 The spices will be sort of crumbly rather than pasty, but the flavor still develops just as well.

Step #9 Add spices to onion, & stir this to coat well-a silicon spatula works really well for this! Or a wooden or regular spoon probably would too.
Step #10 Add the 6 c water, & cover to bring to a boil faster.
Step #11 When a boil has been achieved, add the split peas & let it continue to bubble for a min.
Step #12 Reduce heat to very low, stirring every once in awhile, cover & let simmer for about 1 1/2 hrs, till the split peas are soft & mostly lost their shape.
Step #13 Add lime juice, salt to taste, & serve.
Step #14 Slices of whole-wheat bread are wonderful for dipping.
Step #15 Or, if you use a little less water (say 1/2-1 c less) this would be thick enough to serve like a dahl,over rice.
