Step #1 Boil the broccoli, set 3 floweretts aside for decoration & pass the rest through a food mill.
Step #2 Make the besciamel sauce.
Step #3 First melt butter till bubbling.
Step #4 2nd, add flour then milk.
Step #5 High heat till boiled then smallest fire till creamy.
Step #6 Add the besciamel sauce & egg yokes then fold in already beaten hard egg whites, a pinch of sald & beated until stiff.
Step #7 Butter 6 ramekins & carefully fill with the mixture & bake this at 180C for 30 mins
Remove from the molds & garnish each with half a broccoli flouwerette, salt, tomato sauce, pepper & olive pil.
Step #8 Tomato sauce can be made with garlic or onion with oil, sugar, salt & pepper.
