Potato-corn Chowder With Toasted Sesame Oil Recipe

Ingredients
  • 1 medium parsnip, peeled, cubed .
  • 1/4 c sliced green onions, plus .
  • 2 tsps butter .
  • 2 1/2 c whole milk, divided .
  • 1/2 tsp dark sesame oil .
  • 1/8 tsp fresh ground pepper .
  • 2 medium red potatoes, peeled, & cubed .
  • 1/2 tsp salt .
  • 1 tbsp sliced green onions, divided .
  • 3/4 c frozen corn kernels

Directions
  • Step #1 Melt butter in heavy medium saucepan over medium-low heat.
  • Step #2 Add 1/4 c of the green onions; cook 3 to 4 mins or until softened.
  • Step #3 Add 2 c of the milk, parsnip, potatoes, salt & pepper; bring just to a boil.
  • Step #4 Reduce heat to low; simmer 15 to 20 mins or until potatoes & parsnips are tender; remove this from heat.
  • Step #5 Ladle about 1 c of the mixture into mixer.
  • Step #6 Add remaining 1/2 c milk; mix until smooth.
  • Step #7 Return to saucepan; add corn.
  • Step #8 Simmer over medium-low heat 5 mins.
  • Step #9 Stir in sesame oil.
  • Step #10 Garnish with remaining 1 tbsp green onions.
