Spanish Frittata With Potatoes And Olives Recipe

Ingredients
  • 3 tbsps olive oil .
  • 4 garlic cloves, minced .
  • 1 c monterey jack cheese or cheddar cheese, grated .
  • 2-3 c sliced potatoes (1/2 inch thick) .
  • 2 c thinly sliced onions .
  • 1 1/4 c milk .
  • 1/2 tsp salt .
  • 3 oz neufchatel cheese or cream cheese .
  • 1/8-1/4 tsp cayenne .
  • 6 eggs .
  • 1 tbsp flour .
  • 1 tbsp paprika .
  • 2 c sliced bell peppers .
  • 1/2 c sliced Spanish olives

Directions
  • Step #1 preheat your trusty oven to 400.
  • Step #2 lightly oil a 7x11 inch or 9 inch square baking pan.
  • Step #3 in a bowl, half of the garlic, toss the potato slices with 2 T of the oil, the paprika, & a dash of salt.
  • Step #4 Spread in an even layer on a baking sheet & roast for about 20 mins or till tender & golden brown.
  • Step #5 In the same bowl, toss the onions & peppers with the cayenne & the remaining oil & garlic.
  • Step #6 Spread in an even layer on a second baking sheet & roast until tender & brown, about 15 mins.
  • Step #7 meanwhile, neufchatel or cream cheese, flour, mix the eggs, milk & salt in a mixer & puree to a smooth custard.
  • Step #8 when the vegetables are roasted, reduce the oven temperature to 350.
  • Step #9 Layer the roasted potatoes in the prepared baking pan.
  • Step #10 spread on the roasted onions & peppers.
  • Step #11 sprinkle with the olives & grated cheese & pour the custard over all.
  • Step #12 bake for about 45 mins, till the custard is set & the top is golden brown.
  • Step #13 serve hot or at about room temp.
