Spring Asparagus And Strawberry Salad With A Caramel Drizzle Recipe

Ingredients
  • pepper .
  • fresh grated nutmeg .
  • salt .
  • 2-3 c strawberries, sliced thick .
  • 1 tbsp caramel topping or honey, Plus more .
  • 1 1/2 lbs asparagus, cut in to1/2 inch pieces & peeled if tough .
  • 1-2 tbsp sliced almonds, toasted .
  • 1/2 c raspberry balsamic vinegar .
  • caramel topping, to taste .
  • Garnish .
  • 1/2 red onion, sliced very very thin .
  • caramel topping or honey, to drizzle .
  • 1 tbsp hazelnut oil or olive oil

Directions
  • Step #1 Cook asparagus in well salted boil water for 3-5 mins.
  • Step #2 Rinse in cold water.
  • Step #3 Microwave onion in a 1/8 c of water for 1 min & rinse well in cold water & drain.
  • Step #4 Arrange asparagus on a platter.
  • Step #5 Arrange strawberries over asparagus.
  • Step #6 Or toss with asparagus.
  • Step #7 Reduce the balsamic vinegar to 1/4 c, whisk in caramel or honey, oil, nutmeg, salt & pepper.
  • Step #8 Add onions to the vinegar mixture.
  • Step #9 Pour the mixture over asparagus.
  • Step #10 Drizzle with caramel topping.
  • Step #11 Sprinkle top almonds over the salad.
