Scallops With Seaweed Butter Recipe

Ingredients
  • 1/2 lime .
  • ground red chili pepper (piment d'espelette) or fresh black pepper .
  • 8 tbsps rock salt .
  • sea salt .
  • 4 tbsps unsalted butter, softened .
  • 1/4 sheet nori, finely sliced to make 8 pinches .
  • 8 large fresh sea scallops

Directions
  • Step #1 Arrange 8 clean scallop shells or gratin dishes on baking sheets.
  • Step #2 Using pastry brush & about 2 tbsp of butter brush each scallop with butter.
  • Step #3 Set 1 scallop in shell, put in the fridge until the butter has firmed on th e scallop, 10 - 15 mins.
  • Step #4 Preheat Boiler to High.
  • Step #5 Neatly mound 2 tbsp rock salt, spacing well apart on large plates.
  • Step #6 Remove scallops from refrigerator & sprinkle each with a pinch of nori.
  • Step #7 Dot with remaining 2 tbsp butter.
  • Step #8 Broil until scallops are barely cooked through, about 3 mins.
  • Step #9 Transfer scallop shells to plates, nestling each into a mound of salt.
  • Step #10 Sprinkle top with lime juice as desired & season this with sea salt & piment d'Espelette to taste.
  • Step #11 Serve as soon as possible.
