Ingredients
1/4 c dried mint flakes .
6 lbs leg of lamb .
1/2 c red wine .
3 tbsps dried oregano .
3 tbsps dried rosemary .
2 tbsps honey .
2 medium lemons, cut in half .
salt & pepper (to taste)
Directions
Step #1 Trim excess fat & silver skin from lamb leg.
Step #2 Make crisscross cut in both sides of leg, about 1/2 inch deep.
Step #3 Mix all other ingredients, except lemons, together & allow wet ingredients to partially hydrate dried herbs for 15 mins.
Step #4 Place lamb in roasting pan & rub marinade all over lamb on both sides, making sure to get lots into the cuts.
Step #5 Squeeze lemons carefully over lamb.
Step #6 Cut up potatoes & onions if desired & place around roast, along with lemons.
Step #7 Cover up & roast at 300F degrees until internal temperature reaches 170.
Step #8 degrees, approximately 30 mins per lb.
Step #9 Remove cover & roast at 425F degrees until skin is browned.
