White Chocolate Lemon Pie Recipe

Ingredients
  • 2 c vanilla ice cream, divided .
  • 1/2 c white chocolate chips .
  • 4 1/2 tsps fresh lemon juice .
  • 1 (6 oz) package prepared shortbread pie crusts or graham cracker crust .
  • 1/4 c marshmallow cream .
  • 1 tsp grated lemon peel

Directions
  • Step #1 In a small saucepan, mix white chocolate & 1/4 c ice cream.
  • Step #2 Heat over low heat/flame until chocolate is melted & mixture is smooth, stirring constantly.
  • Step #3 Remove from heat & stir in the marshmallow cream, lemon juice & lemon peel; stir until smooth.
  • Step #4 Cool 10 mins.
  • Step #5 Place remaining ice cream in a medium bowl.
  • Step #6 Fold in cooled chocolate mixture.
  • Step #7 Pour into prepared crust.
  • Step #8 Freeze until solid, 3 hrs.
