Chicken Fettuccini Alfredo Recipe

Ingredients
  • 2 tbsps canned chicken broth .
  • 2 cooked boneless chicken breasts, sliced into strips .
  • 1 garlic clove, minced .
  • 10 oz frozen broccoli, sliced (I use fresh, steamed & sliced) .
  • 1 c low fat cottage cheese .
  • 2 red peppers, cut in half, seeds & ribs removed. (I use roasted red pepper's in the jar) .
  • salt & pepper .
  • 1/2 c parmesan cheese, grated .
  • 12 oz whole wheat fettuccine

Directions
  • Step #1 Preheat oven to 450 degrees.
  • Step #2 Roast red peppers cut side down for 20 mins, until skin is blackened & peeling away.
  • Step #3 Remove from oven & let cool.
  • Step #4 When they can be handled, peel off skin & cut pepper into long strips.
  • Step #5 Set aside.
  • Step #6 (I use roasted red pepper's in the jar).
  • Step #7 In mixer or food processor/blender, puree' cottage cheese & chicken broth until no curds remain, approximately 2 mins.
  • Step #8 Stir in Parmesan cheese & minced garlic.
  • Step #9 Spice up with salt & pepper.
  • Step #10 Set aside.
  • Step #11 Cook broccoli in microwave according to package directions.
  • Step #12 Cook fettuccini according to package directions.
  • Step #13 Save 1/2 c of pasta water before draining.
  • Step #14 Drain & return pasta to bowl.
  • Step #15 Stir in cheese sauce, peppers & broccoli.
  • Step #16 Thin out sauce with reserved pasta water if needed.
  • Step #17 Place chicken strips on top of pasta & serve.
