My Broccoli Salad Recipe

Ingredients
  • 8 c fresh broccoli (about 6 stalks) .
  • 175 g dried cranberries .
  • 350 g vanilla yogurt (low fat is great) .
  • 5 empire apples (use your favourite) .
  • 400F g trail mix (the mix of nuts & raisins) .
  • 1 c mandarin orange segments (optional)

Directions
  • Step #1 Chop broccoli up.
  • Step #2 Bite sized pieces are the nicest.
  • Step #3 Throw In a large-ish bowl.
  • Step #4 Cut the apples into quarters.
  • Step #5 Core them.
  • Step #6 Leave the skin on though, it adds a nice colour & texture to the salad.
  • Step #7 Cut each quarter into three wedges.
  • Step #8 Then slice them into bite sized pieces.
  • Step #9 Throw them into same bowl.
  • Step #10 Toss youth mix & cranberries on top.
  • Step #11 Cut orange segments in half (if using).
  • Step #12 Toss in the bowl.
  • Step #13 Scoop vanilla yogurt on top.
  • Step #14 I use two of those little yogurt c for the vanilla yogurt.
  • Step #15 Mix well.
  • Step #16 I find that two large wooden spoons works well.
  • Step #17 IT won't look like there is enough yogurt at first -- but keep stirring.
  • Step #18 This can be served right away -- but the flavours are best when it has sat in the fridge for at least an hr.
