Mocha Choux Buns Recipe

Ingredients
  • 2 eggs, lightly beaten .
  • 7/8 c whipped cream .
  • 4 tbsps butter, cubed .
  • 3 tbsps sugar .
  • 2/3 c all-purpose flour .
  • 1 tbsp instant coffee, dissolved in 1 T water .
  • 3 oz unsweetened dark chocolate

Directions
  • Step #1 Place the butter & 2/3 c water in a pan & bring to a boil.
  • Step #2 Tip in the flour & beat thoroughly with a wooden spoon.
  • Step #3 Add the eggs a little at a time, beating thoroughly.
  • Step #4 Place in a pastry bag fitted with a star tip & pipe 12 or 16 swirls onto a lightly greased cookie sheet.
  • Step #5 Cook in a preheated oven at 400F degrees F for 20 to 25 mins.
  • Step #6 Remove from the oven & as soon as possible slit with a sharp knife to allow the steam to escape.
  • Step #7 Place chocolate in a pan saucepan with 2/3 c water & heat carefully to dissolve.
  • Step #8 Add the sugar & stir this to dissolve.
  • Step #9 Bring to a boil & let simmer for 7-10 mins, until thickened.
  • Step #10 Leave to cool.
  • Step #11 Beat 2/3 c cream & remaining sugar together until stiff.
  • Step #12 Beat in the coffee.
  • Step #13 Pipe into the cool puffs.
  • Step #14 Pour the chocolate sauce onto 4 plates, pour remaining cream over the sauce & pull a skewer through the sauce to marble.
  • Step #15 Place 3 or 4 buns on each plate & serve.
