Cheesy Potato Bake Recipe

Ingredients
  • 1/2 c butter (1 stick) .
  • 1 tbsp salt .
  • 1/2 c parmesan cheese, grated .
  • 2 c half-and-half .
  • 9-10 red potatoes, medium sized .
  • 10 oz cheddar cheese, grated (extra sharp or at least sharp) .
  • 1 tsp white pepper, ground

Directions
  • Step #1 2 DAYS (48 hrs) before serving, in their skins, boil potatoes, until just fork-tender (about 40 mins).
  • Step #2 Drain well, & put in the fridge, covered, cool, for 2 days to dry.
  • Step #3 Pre-heat oven to 350°.
  • Step #4 In a saucepan, & pepper, warm the half-and-half, salt, butter, just until butter is melted.
  • Step #5 Peel potatoes & coarsely grate (I use food processor/blender).
  • Step #6 Grate the cheddar cheese, plus all of the parmesan to the potatoes, & add ALL BUT ABOUT A CUP OR TWO of cheese), In a large-ish mixing bowl.
  • Step #7 Add the milk/butter mixture & toss to mix.
  • Step #8 Spray a casserole dish or 9 x 13 baking dish with Pam, & pour in potatoes.
  • Step #9 Bake for 1 hr, uncovered.
  • Step #10 Top with the remaining c of cheese & bake another 15 mins, until golden brown & deeeeelicious.
