Manchego Potatoes Recipe

Ingredients
  • sliced fresh parsley or snipped fresh chives, as garnish .
  • 2 1/2 c shredded manchego cheese (About 3/4-1 lb of cheese) .
  • 4 lbs baby red potatoes or baby yukon gold potatoes .
  • kosher salt, to taste .
  • 3/4-1 c milk or cream .
  • 4 tbsps unsalted butter or unsalted margarine, cut into small pieces .
  • fresh ground black pepper, to taste

Directions
  • Step #1 Halve large potatoes, small ones can be left whole.
  • Step #2 Place potatoes in a deep pot.
  • Step #3 Place lid on potatoes & bring them to a boil.
  • Step #4 Uncover, salt the water & cook this until tender, 12-15 mins.
  • Step #5 Drain potatoes & add back to the pot.
  • Step #6 Add butter, milk or cream & cheese & smash the potatoes to desired consistency.
  • Step #7 Spice up with salt & pepper, to taste; garnish with parsley or snipped chives.
