Custard Berry Parfaits Recipe

Ingredients
  • 3/4 tsp vanilla extract
  • 4 tsps cornstarch
  • 2 egg yolks, lightly beaten
  • 1/4 c sugar
  • 1 2/3 c 1% milk
  • 3 c mixed fresh berries
  • 1/4 tsp salt

Directions
  • Step #1 In a small saucepan, mix the sugar, cornstarch & salt.
  • Step #2 Stir in milk until smooth.
  • Step #3 Cook & stir over medium-high heat until thickened & bubbly.
  • Step #4 Reduce heat; cook & stir 2 mins longer.
  • Step #5 Remove from the heat.
  • Step #6 Stir a small amount of hot filling into egg yolks; return all to the pan, stirring constantly.
  • Step #7 Bring to a gentle boil; cook & stir 2 mins longer.
  • Step #8 Remove from the heat.
  • Step #9 Gently stir in the vanilla.
  • Step #10 Cool to about room temp without stirring.
  • Step #11 Transfer to a bowl; press plastic wrap onto surface of custard.
  • Step #12 Refrigerate for at least 1 hr.
  • Step #13 Just before serving, spoon 1/4 c of berries into each parfait glass; top this with 2 tbsps of custard.
  • Step #14 Repeat layers.
