Eldress Prudence's Ambrosia Cake Recipe

Ingredients
  • 1 egg, well beaten .
  • 3 c flour .
  • 1/2 c light cream .
  • 1 c sugar .
  • 4 eggs .
  • 1 orange, juice & zest of .
  • CAKE .
  • 2 c sugar .
  • FILLING .
  • 1/2 pint heavy cream, whipped .
  • 1/2 c sugar .
  • 1 c grated coconut .
  • VANILLA SAUCE .
  • 2 tsps cream of tartar .
  • 2/3 c butter or margarine .
  • 1/2 c butter or margarine .
  • 1/2 c milk .
  • 1 tsp vanilla .
  • 1 tsp baking soda

Directions
  • Step #1 CAKE: Cream butter & sugar together.
  • Step #2 Add the eggs one at a time, beating thoroughly after each egg is added.
  • Step #3 Sift all dry ingredients together & add them alternately with the milk to the sugar-egg mixture.
  • Step #4 Bake at 350° in two greased 8-inch tins for 30 to 35 mins.
  • Step #5 When cool, fill with the following.
  • Step #6 FILLING: Mix together the above ingredients & spread between the two layers & on the top of the cake.
  • Step #7 VANILLA SAUCE: Melt butter in medium saucepan.
  • Step #8 Remove from heat.
  • Step #9 Add remaining ingredients, mixing well.
  • Step #10 Simmer, stirring over low heat/flame about 5 mins or until the sugar is dissolved.
  • Step #11 Serve hot over pudding or cake.
