Whole Wheat Maple Muffins Recipe

Ingredients
  • 1/3 c 2% low-fat milk .
  • 1 large egg .
  • 1/2 c maple syrup .
  • 1/4 tsp nutmeg .
  • 1 c plain yogurt .
  • 1 1/2 tsps baking soda .
  • 1/2 c berries (optional) .
  • 1/2 tsp cinnamon .
  • 2 c whole wheat flour

Directions
  • Step #1 Preheat the oven to 375F & lightly grease a 12-c muffin tin.
  • Step #2 In a large bowl, yogurt, whisk together milk, egg & maple syrup.
  • Step #3 In a medium bowl, baking soda, stir this together whole wheat pastry flour, cinnamon & nutmeg.
  • Step #4 Pour into the large bowl & stir wet & dry ingredients together until just mixd, mixing in berries at the last min, if using.
  • Step #5 Distribute batter evenly in 12 muffin c.
  • Step #6 Bake for 15-18 mins at 375F, until the muffin springs back when lightly pressed & a tester comes out clean.
  • Step #7 Remove from tin & cool completely on wire rack before serving.
