Low Carb Pepperoni Pizza Frittata Recipe

Ingredients
  • nonstick cooking spray .
  • 3/4 c roma tomatoes, sliced .
  • 6 eggs, slightly beaten .
  • 1/4 tsp salt .
  • 3/4 tsp oregano .
  • 1/2 c pepperoni, sliced (I left mine in slices) .
  • 1 c mozzarella cheese, shredded .
  • 1/2 tsp garlic, minced .
  • 1/4 tsp pepper

Directions
  • Step #1 In a medium bowl mix eggs, oregano, salt, & pepper: set aside.
  • Step #2 Lightly coat a large broiler proof skillet with cooking spray.
  • Step #3 heat skillet over med-heat/flame.
  • Step #4 Pour egg mixture into skillet.
  • Step #5 sprinkle with garlic.
  • Step #6 As it sets, run a spatula around edge of skillet, lifting mixture so uncooked portion flows underneath.
  • Step #7 Continue cooking & lifing edges until almost set.
  • Step #8 Remove skillet from heat.
  • Step #9 Sprinkle top mixture with sliced tomatoes.
  • Step #10 Place skillet under the broiler 4-5 inches from heat.
  • Step #11 Broil for 1-2 mins or just until top is set.
  • Step #12 Remove from broiler.
  • Step #13 Top with pepperoni, & 1/2 c cheese, & return to broiler.
  • Step #14 Broil 1-2 mins til cheese melts.
  • Step #15 Sprinkle top with remaining cheese & cut into wedges.
