Step #1 Cut potatoes into large chunks & boil in water until soft.
Step #2 Drain & allow this to cool.
Step #3 Once cool, eggs, salt, mash with oil, pepper & dill.
Step #4 Stir in potato starch until thoroughly mixd, & put in the fridge the mixture for 1 hr.
Step #5 Bring soup or a pot of lightly salted water to a boil.
Step #6 Use your hands to carefully form rough ball shapes from one tbsp of batter at a time, & submerge dumplings in the soup or water - If you prefer, you may use a soup spoon or ice cream scoop to move free-form spoonfuls of batter into the pot.
Step #7 Boil for approximately 5-6 mins - The dumplings will float up to the surface quickly but will need several extra mins to cook all the way through.
Step #8 Serve in soup, or as a side dish with butter or margarine & fried onions.
