Fried Leeks With Tarragon Recipe

Ingredients
  • salt & pepper .
  • 4 leeks, 1-in thick .
  • 1 egg .
  • 2 tsps tarragon vinegar .
  • 1/2 c flour .
  • 1 1/2 tsps fresh tarragon or 1/2 tsp dry tarragon .
  • vegetable oil

Directions
  • Step #1 Trim leeks, slice in 1/2 legnthwise & rinse to remove sand & dirt.
  • Step #2 Cut them about 4-in long & place this in a steamer basket & steam about 10 mins, until tender, & set aside on paper towels for 20 mins.
  • Step #3 Beat the egg, pepper, & half of the tarragon together in a bowl.
  • Step #4 Heat just enough oil to cover bottom of pan until a drop of water will sizzle in the pan.
  • Step #5 Coat the leeks in the eggs, then flour, & fry until browned, turning often.
  • Step #6 Sprinkle top with vinegar & rest of tarragon & serve.
