Penne With Sausage In Creamy Tomato Sauce Recipe

Ingredients
  • 3/4 c 18% table cream or 1/4 c whipping cream .
  • 2 tbsps olive oil .
  • 1-3 tsp dried chili pepper flakes (or to taste) .
  • 2 tbsps minced fresh garlic (or to taste) .
  • 1 1/2 lbs Italian sausages (casings removed) .
  • 1 (14 oz) can whole tomatoes (drained & sliced) .
  • 1 tsp dried basil .
  • 1 tbsp salt .
  • 1 tbsp tomato paste (use a tbsp of tomato paste!) .
  • parmesan cheese .
  • 2 (14 oz) cans crushed tomatoes .
  • 1 lb uncooked penne pasta .
  • 1/2 tsp dried oregano .
  • 1 medium onion, sliced .
  • black pepper .
  • 1/3 c white wine

Directions
  • Step #1 In a large skillet heat oil over med-heat/flame.
  • Step #2 Add in the sausage meat; cook breaking up with a spoon until the meat is lightly browned (about 12 mins) using a slotted spoon remove to a bowl & leave some fat in the skillet.
  • Step #3 Add in the onion, chili flakes, basil & oregano; saute for about 5 mins (adding in the garlic the last 2 mins of cooking).
  • Step #4 Add in tomato paste & stir 1 min.
  • Step #5 Add in the wine & let simmer for 6-8 mins over medium-low heat, or until it almost evaporates.
  • Step #6 Add in the cooked sausage meat along with the crushed & sliced drained tomatoes.
  • Step #7 Add in 1 tbsp salt.
  • Step #8 Simmer uncovered for about 1-1/2 hrs over low heat/flame, stirring with a wooden spoon every once in awhile.
  • Step #9 Spice up with more salt if desired & black pepper.
  • Step #10 Stir in the cream & heat through over low heat/flame.
  • Step #11 Just before the sauce if finished cooking, cook the pasta in boiling salted water until just al dente (do not rinse the pasta with water).
  • Step #12 Serve the sauce with cooked pasta, sprinkle with grated parmesan cheese on top.
