Ingredients
2 garlic cloves, crushed .
400F g Italian tomatoes, partially drained .
1 onion, finely sliced .
300F g cooked fettuccine .
salt & pepper .
100 g salami, sliced .
1 zucchini, grated .
1 carrot, grated .
5 eggs, lightly beaten .
1 tbsp olive oil
Directions
Step #1 Preheat oven to 180°C.
Step #2 In a frypan or saucepan heat oil & add onion, garlic, zucchini & carrot.
Step #3 Cook for 2-3 mins then add salami.
Step #4 In a large bowl, mix pasta, eggs & tomatoes, vegetables, season well.
Step #5 Spoon into lightly oiled flan dish & bake for 45 mins until set.
