Ingredients
  • 6 ears baby corn .
  • 8 oz pineapple chunks in juice .
  • 1/2 tsp cayenne pepper .
  • 1/2 c sliced seitan or chicken meat or duck .
  • 1 tbsp cornstarch .
  • 6 oz seasoned baked tofu, sliced .
  • 1 large white onion, sliced .
  • 2 1/4 c sliced fresh mushrooms .
  • 2 tbsps Braggs liquid aminos .
  • 1 medium zucchini, sliced .
  • 1/4 c seasoned rice vinegar .
  • 1 (8 oz) can water chestnuts, drained sliced .
  • 1 medium carrot, sliced .
  • 1 red bell pepper, sliced .
  • 1/4 c dried wood ear mushrooms, rehydrated, sliced .
  • 1/2 c shiitake broth or vegetable broth

Directions
  • Step #1 Slice the baby corn ears into 1/2 inch rounds.
  • Step #2 Heat a well seasoned wok over med high & stir fry the onion & carrot for about 3 mins then add the mushrooms & stir fry for 3 more.
  • Step #3 Add the zucchinin, chestnuts & bell pepper.
  • Step #4 Stir fry for 3 more.
  • Step #5 Now add your corn, seitan, tofu & pineapple.
  • Step #6 Stir only every once in awhile for 5 to 7 mins.
  • Step #7 The carrot should be crisp tender.
  • Step #8 Now mix broth, braggs, vinegar, cornstarch & cayenne stir until thoroughly mixed.
  • Step #9 Push vegetables to sides form a well.
  • Step #10 Add liquid to center of well.
  • Step #11 Stir constantly until thickened, then stir well to coat vegetables with sauce.
