Cranberry Apricot Pie Recipe

Ingredients
  • 24 dried apricots, quartered .
  • 1 1/4 c water .
  • 1 egg .
  • 2 tsps water .
  • 1/4 c slivered almonds .
  • 1 pastry for double-crust deep dish pie .
  • 6 c cranberries .
  • 2/3 c cranberry liqueur .
  • 2 1/2 c granulated sugar

Directions
  • Step #1 Prepare or buy pie crust for 2-crust 9 1/2" deep dish pie.
  • Step #2 Put cranberries, apricots, sugar & water in a saucepan, & over med-heat/flame bring to boil, cooking 15 mins & stirring every once in awhile.
  • Step #3 Add liqueur & simmer another 15 mins.
  • Step #4 Preheat oven to 375 degrees F.
  • Step #5 Line pie plate with one crust & cut the 2nd crust into 1" strips for lattice top.
  • Step #6 Fill pie shell with cranberry mixture, then add the lattice top.
  • Step #7 For glaze, beat egg & water together.
  • Step #8 Sprinkle top top of pie with almonds, & THEN brush lattice top this with egg mixture.
  • Step #9 Bake 45 mins, until top is golden & filling is bubbling.
  • Step #10 Be careful not to burn or over-brown the edges.
  • Step #11 Cool & serve at about room temp.
