Scampi Ala Doloresa Recipe

Ingredients
  • 4 tbsps olive oil .
  • 1 tbsp minced garlic .
  • parmesan cheese, for topping .
  • 1/2 c marsala .
  • 1 lb raw shrimp, peeled & deveined (26-30 count) .
  • 1 c chicken bouillon (or 2 cubes crushed in 1 c water) .
  • 1/2 lb penne (Ziti or Rigatoni OK) .
  • 20 pieces sun-dried tomatoes .
  • 1 large fresh tomato, cut into wedges .
  • 1 tbsp minced garlic .
  • 2 tbsps butter .
  • 1/2 tsp crushed red pepper flakes

Directions
  • Step #1 Marinate shrimp in Marsala, oil & garlic for 15-20 mins.
  • Step #2 Boil water for pasta & cook slightly under desired tenderness.
  • Step #3 Meanwhile, melt the butter in a skillet & sauté the garlic for one min.
  • Step #4 Add the sun dried tomatoes, cut up fresh tomato & bouillon.
  • Step #5 Remove the shrimp from the marinade & set aside.
  • Step #6 Add marinade only to skillet, mixing in carefully, cooking it down for 5 mins.
  • Step #7 Add shrimp, cooking carefully for 3 mins till they curl.
  • Step #8 Don’t overcook or they will be tough & rubbery.
  • Step #9 Drain pasta & return to the pot.
  • Step #10 Add the shrimp mixture & cook over med-heat/flame for 3-4 mins, stirring constantly, coating the pasta well.
  • Step #11 Serve in bowls, with fresh grated parmesan cheese on top.
