Sopa De Lima Recipe

Ingredients
  • 2 quarts chicken broth .
  • 1/4 c lime juice, freshly squeezed .
  • 8 corn tortillas, cut into thin strips deep fried & drained on paper towels or corn tortilla strips .
  • 1 medium yellow onion, finely sliced .
  • 1/2 tsp ground thyme .
  • 1 lime, cut into wheels .
  • 1/2 tsp ground oregano .
  • 2 poblano chiles, roasted peeled seeded & finely sliced or 2 (4 oz) cans sliced mild green chilies .
  • 1 tsp salt (to taste) .
  • 3 fresh garlic cloves, minced .
  • 1 avocado, peeled pitted & sliced .
  • 1/2 tsp ground black pepper (to taste) .
  • 1 lb boneless skinless chicken breasts, poached & shredded .
  • 1 serrano chili pepper, finely sliced .
  • 2 tbsps olive oil .
  • 1/2 c fresh cilantro, sliced .
  • 2 tomatoes, seeded & finely sliced or 1 (15 oz) can sliced tomatoes

Directions
  • Step #1 Cook & shred chicken.
  • Step #2 Set aside.
  • Step #3 Pour olive oil into a large pot & heat over medium high heat until hot.
  • Step #4 Add the onion & saute for 4 mins.
  • Step #5 Add the garlic & saute for another min or until onions are translucent.
  • Step #6 Add the poblano chiles, tomatoes, spices & chicken broth.
  • Step #7 Stir & let simmer for 15 mins.
  • Step #8 Add the shredded chicken & lime juice & let simmer for 10 mins.
  • Step #9 Garnish each serving of soup with the avocado slices, lime wheels, sliced serrano chile, tortilla strips, & cilantro.
  • Step #10 Also good with sour cream.
